This three-tap soft serve ice cream machine comes with an HTP pasteurization system. This helps to keep hygiene in your machine high, without unnecessary waste.
Pasteurization is achieved by heating the soft serve ice cream mixture to 65 degrees and keeping it at this temperature for half an hour. The mixture is then rapidly cooled to four degrees, which is a suitable storage temperature.
